This morning was the best start to a Sunday. I made homemade Gluten Free Disney Princess waffles. Wacky, right? Here’s the story.

As part of the box of goodies I got last month from Swanson Health Products, I requested a package of  Bob’s Red Mill Gluten Free Pancake Mix.

My weekends have been so crazy that it has always slipped my mind to make them – until my roomie’s baking frenzy inspired me to try and domesticate myself a little bit. As it turns out, she happened to have a Disney Princess waffle maker (no, not a vestige from childhood but a recent birthday gift, we’re going with “nostalgia-chic” on that one). The result? Delicious and cute pancakes.

I topped mine with a little bit of everything – syrup, mini chocolate chips, apples, raspberries, and of course – peanut butter.

Overall, I thought they were pretty good! The recipe called for milk, egg, and vegetable oil (I used normal milk and an egg – but you can also use vegan substitutes!) I threw in a dash of cinnamon. The batter was slightly salty and the waffles were a little bit denser than a non-gluten free mix would probably be, but I would definitely make them again!

Eating Disney-inspired waffles definitely made me nostalgic for some Disney classics. Here’s some food-related numbers to bring you back to the early years…

 

 

 

On the agenda for the day: Tons and tons of Property, and perhaps a little more blogging. Maybe a shake-out run if the rain ever clears – but that might get pushed til tomorrow.

Living dangerously and leaving you with 2 questions:

1. Favorite homemade breakfast?

-Mine is my Dad’s French Toast. Lucky for me I’ll be home next week! *Hint, hint, Dad*

2. Favorite animated Disney movie?

-Sort of tough, but overall I’ll go with The Little Mermaid.

    Favorite homemade breakfast – French toast, for sure. Mario loves it, too. I just made banana pancakes and they were really good too! Thanks, Jack Johnson.

      I’m totally on the french toast bandwagon – and love banana pancakes as well! Pretend like it’s the weekend, now…

    homemade breakfast would have to be pancakes. although I make pancakes more at dinner time than breakfast time. it still counts, right!?

      My mom was always a big breakfast for dinner supporter when I was growing up. So good!
